Spencer

I really did not fancy dogs. I am not an animal lover and I am really really afraid of dogs.

Last year though, Spencer came. He was given by my cousin kuya Ruveil and spencer was really a cute brown and white puppy with a poodle&japanese spitz (?) breed.

He was instantly loved! we bought all the dog stuff. that is a first for my family.haha.

my fear of dogs lessened and I am now more endeared to them.

day by day, Spencer never fails to put a smile on my face. I go to him when I feel sad.

sometimes though, I wish that dogs do not pee and poop.haha

we love him to bits.

there he is at his first day at our home with Alaska milk in his bowl :)

He has grown so much now but never fails to give the same joy to us.

He is the first doggie that licked my hand.

I think that is a sign of affection for dogs, I just do not know. I assumed that from the movie "Hachiko" when Hachi did the same to the daughter of his real master and forever pal ;)

A human need :)

I use the computer a lot.

it has really been an indispensable tool for me since I was a student laboring sleepless nights with requirements up to right now, where almost everything comes in digital :)

so yah, you are a human need. I need you. I hope, by a bit, you can decrease the times when my back starts to shut the comfort out of my life.

I think you will really be a worthy splurge item.

20 posts out of the million. I don't know if I am just plain crazy for attempting a million rants but will do what I can do. the idea just popped in my mind. I really did not intend for a million posts. The blog title just hit my head and kaboom.

for a depressed girl, I felt pretty productive this day despite waking up at 5 in the afternoon. haha. I had some crazy dreams and it was raining so sleeping seemed to be bliss until I woke up with a light headache. so much for really oversleeping.haha

my back still hurts and the rain is still falling due to Falcon.

Despite being pretty elated tonight, I still am under the dilemma of finding what I want to do and what I can do at the present moment. I know that time is gold. hai. the pressure is on me again.

McDonald Insular.

This newest branch of McDonald was set to be open to public yesterday, June 24, 2011.

Luckily, we were invited to the soft opening/blessing last June 23, 2011.

When we got there, we were a bit early and so we hesitated to come in yet. The ribbon was still uncut! so we decided to walk around some time :)

When we walked in, we were greeted cordially by the staff and we registered and had a free picture souvenir coupon. One picture 3 poses (not able to avail it) .haha. We were not able to witness the actual ribbon cutting because we were all actually inside and us, we were on the second floor. events downstairs were diffused to us via the huge speaker in the second floor. "Panauhang pandangals" were Mayor Domogan, VM Farinas, Congressman Vergara and some city councilors. Lots of established people from baguio there. Blessing was done by Father Chang. I got that info from my mom. He is really old but still can walk straight without any arching back.haha. hard of hearing though (I think).

so here we are. all smiles for the camera.haha ;). the staff were so friendly and cordial. Only the Mcdonald mascot was there. I wished all the mascots were there. The food ofcourse was free, buffet style with spaghetti, fries, rice, chicken, burger and apple pie. The burger was a quart of a whole serving and the pie was halved.

Here is my mom and my aunt (twin sisters).

I have shared this day with them.

always a great food adventure with them :)

Love them both.

Hoped that Papa, tita mila and my brother was there though. 

NO regrets. had a happy time :)

Stone

tonight was a bit harder on me compared to the other ones.

after reading so much and learning new information, a heavy stone suddenly formed in my heart that weighs it down by heavy gravity.

I really do not know what to do in my life.

I know I lack courage for doing some which I take as a step to knowing what I want.

I just do not really know what I wanna do.

sure I am in no physically stressful activity now but hey look at me, I am getting thinner.

I may not notice it but everyone does.

I do not starve myself. I am not anorexic and bulimic and mentally irate.

see how stress (the intangible one) makes me cut weight without meaning to.

Interested in...

I think this is one step I need to do inorder to find and rediscover my passion (I think I lost it for being such a follower for the longest time). To find my heart also, what I want and where am I supposed to go. This will be done in a random fashion.

1. I like color. but I don't like outlandish ones. I am not a fan of neon colors except for when they are used as highlighters.

2. I like simple clothing. I want a look that is put together with the right elements and colors. I want breezy clothes, airy and loose ones but I usually wear too structured ones. My style is plain and simple. I go for casual elegance.haha. I don't like prints that much. I have no absolution regarding clothes, If I like it, I will wear it.

3. I like white elegant plates. The ones professional chefs usually use to plate their luxury dishes.

4. I like desk and office work. I enjoy paper work. not always but that is always a part of  me.

5. I usually wonder how to go about the marketing business. The ones where you can be an exclusive distributor and stuff. I get some thrill by thinking of managing something like that.

6. I like order, schedules and organization.

7. I like to consider all resources that I have before I start putting them as one in one project. Like my books are all open and I want to read them all before I write my paper.haha

8. I like blogging. :) sometimes though, I get really lazy to open my laptop.haha

9. I am excited to earn some cash.

10. I still like to learn the piano.

11. I like coffee shops though I am not a fan of coffee (nausea and palpitation alert!)

Happy Mother's Day

HAPPY MOTHER's DAY :) haha. posted this just because I was not able to greet happy mother's day last time. I was in Bolinao and the confusion about the real date of mother's day came to me until it passed my head. I was not able to greet my mom that day ;c. I caught up though. but I am terribly sorry and woeful for that.

my homemade creampuffs

It has been so long since I made some. The first time I made them, I realized that internet recipes can also turn out successful.haha ;) I loved making them since. The first one I made was plain.

I also made them as Christmas gifts to my friends. At that time, the custard was faintly flavored with strawberry.haha. I failed only once when I placed an extra egg on the shell mix.haha :)

this latest batch are cinnamon crusted creampuff shells with strawberry cinnamon custard filling. dusted with icing sugar on top :)

Pandesal-- the Filipino quick fix :)

PANDESAL

In the Philippines, pandesal is a very common and known food!. best for breakfast and a quick snack. It is mostly paired with other types of food and drinks such as pancit, ice cream, coffee, noodles etc.

Definition: Pan de Sal is the most popular yeast-raised bread in the Philippines. Individual loaves are shaped like garrison caps due to its unique method of forming. (wikipedia)

Bakers nationwide have their own way of making pandesal. At this time, the pandesal has already a lot of variations and names. The name maybe different but they still root down to the good old "pandesal".  Ingredients to making the best pandesal vary. My dad said that they used *, which is an ingredient I never expected to be used in making pandesal. He said that it was what made the bread yummy. haha. My dad's family used to own a bakery. Sadly, I never got the chance to see or experience it. haha. [btw: my mom's family also used to own a restaurant and sadly again, I never got the chance to see and experience it]

I may not know everything about the so called "pandesal" but I know what I know and of course, what I want.haha. following are the ones I like so far from the various establishments here in Baguio and in La Union.

A. small sweet pandesal from the bakery near our home in trancoville

This is the first pandesal I have tasted and I grew up eating it. I used to really like and crave for it since I was little. haha :) haven't had them for so long now.haha :)

B. Pandesuello (? spell) from Swiss Baker

Another pandesal that I grew up eating. these are big pandesals. haha. My mom used to buy them everyday before. she likes it so much. perfect for an afternoon sandwich :)

C. Big pandesal from French Line at Sunshine Supermart

I used to think that this was the same thing as that from Swiss Baker when I was a kid. haha. I remember the pandesal here usually sells like hotcakes that people would wait in line for the newest batch. talk about smoking hot pandesal.

D. Dinner bread from French Line at Sunshine Supermart

I really do not know if this counts under the term or family of the old pandesal but I think it can be.haha. my brother and I was addicted to this bread. It comes in "almost" bite sized pieces. We love this with the famous Cheese Whiz :)

D. Mulawin hot pandesal in San Fernando La Union

The first time I knew about this and the first time I tasted it was when I had my DR completion duty in ITRMC (Ilocos Training and Regional Medical Center). haha. It is across one of the hospital entrances. Small sized pandesals with a sweet taste. yummy! there is a "Mulawin pandesal" here in Baguio but I really don't like their pandesal as much as I did in La Union. La union Mulawin tastes better.

E. Pandesal from Cafe by the Ruins

I really don't remember tasting this but Cafe by the Ruins is famous for their pandesal. My mom says it is really great. will try to bag some in the future :)

F. Pandesal from Cuevas

Cuevas is actually a bakery located in the Baguio City Public Market (IDK the exact location). I usually get a taste of this when I visit our store in the market. Our store is a loyal customer of theirs and when I say loyal I mean "everyday without fail customer".haha :). sometimes, Papa brings home some.

G. Plain pandesal of Pan de Manila

So good. also comes in a cute paper container.haha :)

H. Cheese pesto pandesal of Pan de Manila

My current favorite and the favorite of my family too. haha. I just tried this out of curiosity when Pan de Manila opened their branch in SM Baguio.haha. tasted good. it stands to its name. Pesto bread (with the green stuff you usually have in pesto pasta). I think it is basil but I am not quite sure about that.haha. It also has yummy cheese with it. I always wish that the cheese is present in the whole of the pandesal bec. it is only concentrated on a spot or two.haha. I like this bread best with Pan de Manila's herbed cream cheese spread.haha. perfect for breakfast and fast snack!

Top chef masters season 2

The first top chef episode I saw was the episode before finale of TOP CHEF DC at 2ndavenue. I was rooting for angelo (since he is a very good chef) but he did not win. He is back in TOP CHEF ALL STARS though. :)

I watched the episode by chance. (I was just skimming through channels until it caught my attention). I was addicted since :)

After that episode of TOP CHEF DC, I was intrigued by the next show TOP CHEF MASTERS so I still tuned on (madaling araw eto!, recap kasi!) and it got my undivided attention even more.

chef J. Waxman

I enjoyed watching season 2 so much. I was rooting for chef Jonathan Waxman  (I think he is so nice and talented, down to earth family man) but he did not win. I admire chef  Rick Moonen's perky attitude in the kitchen and love for fish, chef Susur Lee's confidence and talent in fuzion cuisine and winner chef Marcus' raw talent for putting things together in a complex and sophisticated fashion. They play for a charity of their choice. the only credit I think they get from the show is the adventure, prestige and fun experience, also good memories (to have and to share to the public). haha. I also like host KellyChoi being that she is so pretty and good :) As for the crtitics and judges, I like Gail Simmons & chef Tom Collichio best. :)

btw: I also like chef Susan Feniger. season 2 finale was great. dramatic and well delivered :)

Season 3 came. Lady chefs had to battle it out here. The best part of TOP CHEF MASTERS SEASON 3 is chef Curtis Stone!. wah!.  the chefs in season 3 are good but I still like SEASON 2 a lot better! :)

Headphones / headset

I trained to be a medical transcriptionist while I was waiting for the results of my board exam. I am a registered medical transcriptionist as certified by TESDA. I had a glimpse of how healthcare was valued in foreign countries  such as the US and Middle East. I have learned a lot of new medical terms and some relevant health knowledge from transcribing MD and NP recorded accounts of a patient's history and physical, clinic report, follow up note, operative report (tricky and with real 'down to detail' accounts), radiology report and discharge summary. I enjoyed but had a nagging back ache in return. I improved my typing skill though. It was through MT that I learned how to use the home key type of typing.haha. very convenient if you already get the hang of it.

I got this headset for my MT OJT days. I still love it. and now, I can use it for other purposes. will tell you soon of that purpose. till then, here I am, playing silly over the headphones. Its mic is functioning well so YEY! for that.

The headset has been with me with my first OJT outside formal schooling. It has been with me with another first this night.haha.

funny that I'm blogging about my headphones/headset (I think headset is a better term, being that it is a set, with the mic and all. LOL)

after all, this is just me :)

i am new here but I hear about and see blogspot often.haha
i am going to start my blog here.
will get to know first the basics and the sort.
familiarize myself and what the heck, post and post all I want.

I don't promise to be updated though. sometimes laziness over opening my laptop gets the better of me and quite busy and preoccupied right now. what with trying to figure out how to squeeze my way through applying for an NCLEX examination and going for that online tutoring job. excited for the job. still queasy and confused and bewildered and oh yeah, OVERWHELMED by the NCLEX application process.

still on the limits of "close to frustration" feeling of taking up medicine and the consequences of it (financial and stress related ones) plus the ultimate question of my life right now "what do I want to do in life and where is my heart??".

i plead guilty for being less courageous and being less of a risk taker. I am not a huge opportunity grabber and I think a lot before doing or committing to something. sometimes, or often times, my thinking makes me retreat to saying "no" and "blah blah blah" to "pressure pressure pressure" to "depression depression" to finally "haaaaay" and still thinking of my fears of making the first step.

I ask for courage, strength and guidance Lord.
also, more than that, the safety, health, happiness and long life of my family ( mama, papa and paul), my immediate relatives ( close aunts and uncles) and dear loved ones.

all for them and For Jesus and God.

let us pray and smile because He is there for us all the way.
